Jon McCoy is amazingly talented and I also love that style of painting but it's difficult to direct someone how to paint in a certain style. It's something that will come to you with experimentation and practice.
I'd say the best place to start is to download some brushes that other artist have made avaliable such as Daarken. In his tutorial area on his page there is a zip file to download with a sh*t load of brilliant brushes inside, he has more that enough to start experimenting with. Also pick up some art magazines such as ImagineFX, they always have plenty of brushes on their cd's and also plenty of video tutorials were you can watch some of the best artists as they create their work to give you an idea of the process. Also textured photos are essential in creating this style, you can find plenty on Abduzeedo. After you've found a few that suit what you're creating, place them on your canvas and play around with the layer settings to get it looking right.
