1) Yes, we try to guess the colors.
2) Yes, this will help you see colors better, value, hue etc.
You learn nothing from just sampling off the photo.

Cormax try to "guess" the colors and apply it to your study. So no cheating (Colorpicking). And i guess you can call that a color study (Lifepainting for expample). There is a whole stream by Zach covering anatomy just watch some of his videos maybe they help.
