I think i would define art as something, that person spends time, using various tools to achieve visually pleasing result, one way or another. And doing so with our limited sense (eyes, ears, touch...) and tools.
If you make, i don't know, a 3d model by scanning actual real world object, i wouldn't call that art. Again, because it doesn't really involve limited human senses into production. Because it's those sense that can do give something new, something fresh into the "art" you are creating.
If i stay a bit with this example, when you can that object, your limited sense doesn't really give you any input. "Nah, that head just feels wrong. Also, i think it's better if i oversize the head just a bit (for some reason). maybe change nose a bit. ).
You may or may not be correct with those changes, but it's this input from our limited senses that gives something unique to the product, and this uniqueness makes this product an art.
Because if you give same task to another artist, it will produce different results, because he's limited sense will give him different ideas how to approach the subject. And again, you will get another unique result.
While with scanning 3d modell, give it to 100 good "scanners", and they will produce very similar results".
Well, atleast that's how i see it...hope it makes sense...
