I think what you're really lacking in your paintings are a solid drawing foundation. While color and value are the icing in paintings, think of drawing as the cake that needs to be present else the icing is useless (forgive me, I'm quite hungry at the moment). Drawing is 90% of the painting and if you don't have a good drawing to paint over it will just not look right, regardless of how long you spend on it.
And when I saw drawing, I mean really get down the proportions and get everything right before you dabble in colors. Go slow! Take your time, you're not racing against anyone. It can be a bit frustrating but there is no shortcut to it. The more you draw, the easier it'll come to you. You're doing great by doing the anatomy drawings, but challenge yourself further. Try to get it exact, within one or two strokes. Three or more make it look messy.
It's okay to look at reference for your personal works, even doing studies will go a long way to help you accomplish great paintings.
Oh, and the most important aspect of art - have fun. I can tell you already are, but keep going.
