Fellow graphic design student/wannabe illustrator here. I don't concern myself with colour profiles and work in RGB, since a lot of options in Photoshop aren't avilable if you work in CMYK. I assume most publishers just ask you to submit your stuff in RGB and handle the conversion themselves, since they know the exact colour profile they use.
